The paper presents the results of experimental research of conditions of workers of pastry shop in Kyiv region, by parameters of meteorological conditions, under which there are different stages of the relevant process. The method of calculating the amount of heat not only from the technological equipment, but also taking into account the heat from lighting devices, installation of premises, heat dissipation of workers and other sources is given.
